Best Cooking Practice
Remove saponin, the bitter compound that covers quinoa seeds, by thoroughly washing the quinoa 3-4 times until the water comes out clear and clean. Water will look soapy first and wash it until it is no longer soapy and you can see the quinoa seeds crystal clear.
Add 1.5 cups of quinoa to the cooker, add 1 and 3/4 cup water, 2 cups if cooking in a regular pot. Add salt to taste.
In a regular pot, set it to high heat and when it comes to a boil, reduce the heat, cover the pot, and cook for 20 minutes. Wait after the cooking time is up. After cooking time is done, let the pot sit covered for 30 minutes, for an open pot. For a pressure cooker, let it sit for an hour after cooking. Rake the top of the quinoa gently with a fork. Be very gentle and not aggressive. If you find it clumpy, cover it with a paper towel and rest for another 30 min.
After that, rake gently again, and you will see that each grain is tender and separate and not sticky. Cooked quinoa can be stored in the refrigerator inside a container up to a week. You really need to cook this ahead. Be ready for 1.5 hrs of waiting. You can add it to salad and enjoy the goodness of a healthy meal.
