Gluten-Free Momo Fillings, Chutneys and Serving Ideas

Once you have mastered a soft, crack-free gluten-free momo wrapper, the fun begins. The filling, the chutney, and the way you serve your momos are what turn a good batch into a memorable one. This guide covers five gluten-free fillings, two classic momo chutneys, and six ways to serve your momos, with tips to keep every element free of hidden gluten.

Keep your filling gluten-free: The golden rules
- Swap the soy sauce. Regular soy sauce is usually brewed with wheat. Use soy sauce or tamari labelled gluten-free, or coconut aminos.
- Check your hing. Many hing powders are compounded with wheat flour. Use hing labelled gluten-free, or skip it.
- Avoid stock cubes and ready masalas unless they are labelled gluten-free.
- Drain and cool. Squeeze water out of vegetables and cool cooked fillings before use, so wrappers do not turn soggy or split.
- Chop finely. Small, even pieces are easier to wrap and cook evenly in 8 to 9 minutes of steaming.
Each filling below makes enough for one batch of 8 to 10 momos (about 2 tsp per momo) made from 75 g of the Dowbox blend.
Five gluten-free momo fillings
1. Classic veg momos
Sauté 1 tsp each of minced ginger and garlic in 1 tsp oil, add 2 tbsp chopped onion, then 1 cup finely chopped cabbage and ¼ cup grated carrot. Cook on high for 2 to 3 minutes. Season with salt, black pepper, and ½ tsp gluten-free soy sauce, finish with spring onion greens, and cool completely.
2. Paneer momos
Crumble ½ cup paneer and mix with 2 tbsp finely chopped onion, 1 tbsp chopped coriander, a little green chilli, ½ tsp minced ginger, salt, and pepper. Add 2 tbsp sautéed, finely chopped capsicum for colour. No cooking needed beyond the capsicum. Note: paneer is dairy, so this filling is not vegan.
3. Corn and cheese momos
Mix ½ cup boiled sweet corn (lightly crushed), 3 tbsp grated cheese, 1 tbsp finely chopped capsicum, a pinch of chilli flakes, oregano, salt, and pepper. Check that your cheese is gluten-free, as some processed cheeses contain additives. Not vegan.
4. Mushroom and spinach momos (vegan)
Sauté 1 tsp garlic in oil, add ¾ cup finely chopped mushrooms, and cook until their water evaporates. Stir in ½ cup chopped spinach until wilted, then season with salt, pepper, and a few drops of gluten-free soy sauce. Cool before filling.
5. Chicken momos
Mix 100 g chicken mince with 2 tbsp finely chopped onion, 1 tsp each minced ginger and garlic, 1 tbsp chopped coriander, salt, pepper, ½ tsp oil, and ½ tsp gluten-free soy sauce. Use the filling raw. Make sure the momos steam for the full 8 to 9 minutes so the chicken is cooked through, and cut one open to check before serving.
Two gluten-free momo chutneys
Spicy red momo chutney
Soak 4 to 6 dried Kashmiri or regular red chillies in hot water for 15 minutes. Blanch 2 medium tomatoes for 2 minutes and peel. Blend the chillies, tomatoes, 4 garlic cloves, a small piece of ginger, salt, a pinch of sugar, and 1 tsp vinegar or lemon juice until smooth. Simmer for 3 to 4 minutes in 1 tsp oil for a deeper flavour. Adjust heat to taste.
Sesame and tomato jhol achar
Dry-roast 2 tbsp sesame seeds until golden. Cook 2 chopped tomatoes with 2 garlic cloves and 1 to 2 dried red chillies in a little oil until soft. Blend with the sesame, salt, a squeeze of lemon, and water to a pourable consistency. This is the base for jhol momos (see below), or a tangy dip on its own.
Quick soy dip
Mix 2 tbsp gluten-free soy sauce or tamari, 1 tsp vinegar, ½ tsp chilli oil or chilli flakes, a little minced garlic, and sliced spring onion.
Six ways to serve gluten-free momos
1. Steamed
The classic. Steam on medium heat for 8 to 9 minutes in a lined steamer and rest for 2 minutes. Serve with red chutney and soy dip.
2. Pan-fried
Steam the momos first. Heat 1 tbsp oil in a non-stick pan, place the momos flat-side down, and cook until the bases are golden and crisp. Serve immediately for a crisp base and soft top.
3. Deep-fried
Steam first, let the momos cool slightly and pat them dry, then fry in hot oil until golden. Steaming first helps the wrapper hold together. Use fresh oil that has not been used for wheat-based snacks.
4. Jhol momos
Place freshly steamed momos in a bowl and pour over warm sesame and tomato jhol thinned with a little hot water. Garnish with coriander and spring onions.
5. Chilli momos
Steam or pan-fry the momos. In a wok, sauté garlic, onion, and capsicum, add gluten-free soy sauce, a spoon of your red momo chutney, and a splash of water. Toss the momos through and serve hot. If you thicken the sauce, use a starch you know is gluten-free, such as tapioca starch.
6. Tandoori-style momos
Coat steamed momos in a marinade of hung curd (or thick vegan yoghurt), tandoori masala labelled gluten-free, lemon juice, and salt. Grill or air-fry until lightly charred at the edges.
Gluten-free momo party checklist
